Erin Crowell, BSc AHN

CEO/Founder

Erin Crowell is the CEO and founder of Happy Kids Nutrition Academy. With a BSc in Applied Human Nutrition (Dietetics), she’s on a mission to make healthy eating fun for kids aged 8-18. Erin blends science-backed nutrition with interactive lessons, empowering kids to build lifelong habits. Her passion turns complex concepts into exciting adventures, helping families worldwide grow healthy and happy!

May Green, BSc AHN

Teacher

May Green, a BSc in Applied Human Nutrition (MSVU) graduate, blends academic expertise with a passion for teaching at Happy Kids Nutrition Academy. She specializes in making nutrition fun and relatable through creative, engaging methods. With a background in childcare and customer service, May connects effortlessly with young learners, simplifying complex topics to build their confidence. Her energy and dedication make her an inspiring guide for kids on their healthy living journey.

Bailey Fitzgerald, R.H.N

Bailey Fitzgerald, R.H.N., combines holistic nutrition with a deep background in child development. As a former ABA Therapist, she’s an expert at supporting children with diverse behavioral and cognitive needs. Bailey brings a compassionate, tailored approach to the Academy, helping families create balanced, sustainable lifestyles. Her unique blend of nutritional knowledge and experience ensures every student feels seen and empowered to build healthy habits for life.

Mandy Lai, M.AHN, B.A. (Hons)

Mandy Lai, holding a Master’s in Applied Human Nutrition (University of Guelph), blends clinical knowledge with a compassionate approach. With experience in hospital and community settings, she’s dedicated to helping kids build healthy relationships with food. Fluent in English, Cantonese, and Mandarin, Mandy makes nutrition education inclusive for all families. Her multicultural lens helps students celebrate food diversity while thriving in a supportive environment.

Ariella Carandang, BSc (Chemical Engineering)

Curriculum Developer

Ariella Carandang, a Chemical Engineering student and curriculum developer, turns science into fun, interactive learning. Using her engineering background, she breaks down complex nutrition into evidence-based lessons that empower kids as the heroes of their own health. Ariella loves boosting student confidence through creative education. Fun Fact: A huge fan of spicy Korean food, she often weaves global culinary perspectives into her innovative course designs!

Kyla Johanson, B.Sc, R.H.N.

Kyla, R.H.N., is a Registered Holistic Nutritionist with a BSc from the University of Saskatchewan. A mom of three living on a farm with babydoll sheep and a big garden, she brings an authentic farm-to-table perspective to her teaching. Kyla is a lifelong learner who loves helping kids connect mind, body, and soul while embracing their unique selves. She’s passionate about sharing the joy of fresh food and helping students discover exactly where their meals come from!

Megan Henry, BSc (Honors Specialization in Nutrition and Dietetics)

Megan Henry (UWO Nutrition & Dietetics) brings clinical expertise and a passion for holistic health. Since 2020, she’s run a private practice focusing on mindset and emotional wellness. With experience as a hospital Diet Technician and training in CBT, Megan is uniquely skilled at helping kids build a positive relationship with food. She empowers our students to develop lifelong healthy habits while navigating the vital connection between emotions and eating. 

Taylor Wilkinson, B.Sc. (Kin), B.Ed.,

Teacher

Taylor Wilkinson, B.Sc. (Kin), B.Ed., combines her Kinesiology and Education expertise (USask) with a Level 5 TEFL Diploma. Having taught K-12 and coached sports camps, she excels at making health and wellness fun. A former USask Women’s Hockey player, Taylor’s athletic background fuels her passion for helping kids understand the benefits of an active lifestyle. Outside the classroom, she’s an avid hiker and golfer who loves to travel!
